The Climate-Smart Jackfruit Ingredient Platform converts underused young-jackfruit byproducts from the Mekong Delta into functional plant-based ingredients for meat analogues and blended meat. The innovation addresses farmer income instability, agricultural waste, and the high cost and carbon footprint of global plant-based ingredients. Using proprietary restructuring and fermentation processes, the platform creates clean-label, fibre-rich bases compatible with original equipment manufacturing, offering lower costs, lower emissions, and culturally relevant taste profiles compared with soy, wheat, or pea-based alternatives. This solution strengthens sustainable value chains, reduces waste, and enables food companies to accelerate their transition towards healthier, climate-friendly products.
