Jirawan Apiraksakorn
Dr. Jirawan Apiraksa is an Associate Professor at Khon Kaen University. Her research on hydrolytic enzymes for prebiotic preparation and functional food innovation from probiotic and prebiotic and has received awards from Thai and international agencies. She serves as an International Executive Board Committee (IEBC) member of the Asian Federation of the Societies of Lactic Acid Bacteria.
Developed by This innovation converts xylan, which derives from agricultural residues, to xylooligosaccharides (XOS), a health-promoting substance and prebiotic which can be used in food as a functional ingredient. Agricultural by-products are often unused and disposed of by burning. However, this innovation proposes that by modifying these agricultural residues to XOS it can lead to the reduction of waste accumulation, air pollution and supports a national initiative for food and health.
